The 2007 French Oak Chardonnay was harvested on October 3rd and 4th from the 15 year old vines in Lot 31. After pressing and a cold soak period, fifteen new French oak barrels were filled and inoculated with a blend of yeasts designed to highlight the tropical fruit character locked in the grapes. Apart from tropical fruit such as pineapple and lemon, the wine has developed a lovely lemon cream pie and butterscotch nose. This wine is drinking nicely at release but will develop with further bottle age until at least 2017.
