 | The 2007 Unoaked Chardonnay was harvested in the first 4 days of October with ample natural sugars and just enough acid to prevent the wine from seeming flabby. A blend of yeasts was chosen to give the mid-palate some viscosity and draw out the rich fruit component, and was allowed to sit on its lees for an additional 3 months.
This wine was fermented and aged in stainless steel tank which provides crispness to the wine. On the nose you will discover aromas of lemon and butter with an underlying hint of mint and pastry. The palate follows with creamy lemon tart, and has a long crisp finish.
